Description
Achieve restaurant-quality crunch! Skillet-fried cornstarch-dusted chicken meets creamy Bang Bang sauce and fluffy jasmine rice. Fast, flavorful, and filling.
Ingredients
Scale
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 1/4 cup cornstarch
- 2 tbsp vegetable oil (for cooking)
- 1 cup cooked jasmine rice (for serving)
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp sriracha (or to taste)
- 1 tsp lime juice
Instructions
- Step 1: Prepare the chicken by tossing the cubed pieces with the cornstarch until evenly coated. Heat the vegetable oil in a large skillet over medium-high heat.
- Step 2: Add the coated chicken to the hot skillet and cook for 5-7 minutes, turning occasionally, until the chicken is golden brown, crispy, and cooked through (internal temperature of 165°F). Remove the chicken and set aside.
- Step 3: While the chicken cooks, prepare the Bang Bang sauce. In a small bowl, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth and well combined.
- Step 4: Return the cooked chicken to a clean bowl and pour the prepared Bang Bang sauce over the chicken. Toss gently until every piece is fully coated.
- Step 5: Assemble the Bang Bang Chicken Bowls by spooning the cooked jasmine rice into serving bowls, topping with the sauced chicken, and serving immediately.
Notes
- For best leftovers, store the cooked chicken and the remaining Bang Bang sauce separately in airtight containers in the fridge for up to three days, combining just before eating to maintain the chicken's crispiness.
- If reheating sauced leftovers, spread the chicken on a foil-lined baking sheet and warm in a 350°F oven for about 8 minutes to help restore some texture, then serve over freshly steamed rice.
- Elevate your bowl by garnishing generously with thinly sliced green onions, a sprinkle of toasted sesame seeds, or some shredded cabbage for essential freshness and crunch.
- Chef's Tip: Ensure the oil is truly hot before adding the cornstarch-coated chicken; this high heat is critical for flash-frying the exterior and locking in that desirable golden-brown, crispy texture.
