Ingredients
Scale
- 8–10 mini flour tortillas
- 1/4 cup granulated sugar
- 1 teaspoon ground cinnamon
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla powder
- 1/2 cup heavy cream, cold
- 1 cup mixed berries (fresh or frozen, thawed)
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a small bowl, combine granulated sugar and cinnamon. Lightly brush each mini tortilla with a tiny amount of water or melted butter, then dredge both sides in the sugar-cinnamon mixture. Drape the tortillas over two bars of an oven rack or place them in a taco shell baking rack to create the taco shape. Bake for 7-10 minutes, or until golden brown and crisp. Let cool completely.
- Step 2: While the shells cool, prepare the cheesecake filling. In a large bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla bean paste, beating until well combined and lump-free.
- Step 3: In a separate, cold bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until the filling is light, fluffy, and uniformly combined.
- Step 4: Once the tortilla shells are completely cooled and crisp, carefully fill each shell with a generous amount of the cheesecake filling.
- Step 5: Top the cheesecake filling with the mixed berries. Serve immediately or chill in the refrigerator for 15-30 minutes for a slightly firmer filling before serving.
Notes
- To keep your taco shells perfectly crisp, store any leftover unfilled shells in an airtight container at room temperature and the cheesecake filling separately in the refrigerator for up to 2 days; assemble just before enjoying.
- These delightful cheesecake tacos are designed to be enjoyed cold; reheating is not recommended as it would compromise the creamy filling and the fresh fruit's texture.
- Elevate your Berrylicious Cheesecake Tacos by adding a small dollop of extra whipped cream or a sprinkle of toasted coconut flakes on top of the berries for an irresistible finish.
- For the best texture, always ensure your heavy cream is very cold and your mixing bowl is chilled before whipping, which helps achieve those perfect, fluffy soft peaks for your creamy filling.
