Description

Experience frosty bliss! Sweet banana and creamy peanut butter frozen bites, enrobed in crisp dark chocolate. Your perfect guilt-free treat. Recipe steps and nutritional info inside.

Ingredients

Scale
  • 23 medium ripe bananas
  • 1/2 cup natural creamy peanut butter
  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1 teaspoon coconut oil (optional, for smooth chocolate coating)
  • 1/4 teaspoon flaky sea salt (for sprinkling)
  • 2 tablespoons finely chopped peanuts or pecans (optional topping)

Instructions

  1. Step 1: Peel and slice the bananas into approximately 1/4 to 1/2 inch thick rounds. On half of the banana slices, spread about 1/2 teaspoon of peanut butter, then top with another banana slice to create small banana "sandwiches."
  2. Step 2: Arrange the banana-peanut butter sandwiches on a parchment-lined baking sheet or plate. Place them in the freezer for at least 30 minutes, or until the peanut butter is firm and the bananas are slightly frozen.
  3. Step 3: While the banana bites are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted. Alternatively, melt over a double boiler.
  4. Step 4: Remove the frozen banana bites from the freezer. Using a fork or toothpick, dip each banana bite into the melted chocolate, ensuring it's fully coated. Let any excess chocolate drip off back into the bowl.
  5. Step 5: Place the chocolate-covered bites back onto the parchment-lined baking sheet. Immediately sprinkle with flaky sea salt and/or chopped peanuts (if desired) before the chocolate sets.
  6. Step 6: Return the baking sheet to the freezer for another 1-2 hours, or until the chocolate is completely set and the bites are firm. Store the healthy frozen snack bites in an airtight container in the freezer and enjoy directly from the freezer.

Notes

  • To keep your banana bites perfectly fresh, tuck them away in an airtight container in the freezer, where they'll stay delicious for several weeks – perfect for whenever a craving strikes!
  • These bites are designed to be enjoyed directly from the freezer, but if you prefer a slightly softer texture, let them sit at room temperature for just 5-10 minutes before diving in.
  • Elevate your snack time by serving these as a refreshing pick-me-up on a hot day, a satisfying pre-workout energy boost, or a healthier alternative to dessert after dinner.
  • For the smoothest, most professional-looking chocolate coating, don't skip the optional teaspoon of coconut oil when melting your chocolate; it helps achieve a lovely sheen and ensures an even, easy dip.
