Description
Discover the magic of homemade Japanese Mochi! Pillow-soft, incredibly chewy, and gluten-free, this sweet treat pairs perfectly with fresh strawberries. Make it easily in the microwave.
Ingredients
- Shiratamako (glutinous rice flour): 1 cup (100g)
- Granulated sugar: 1/4 cup (50g)
- Water: 3/4 cup (180ml)
- Fresh strawberries: 8-10 medium-sized
- Cornstarch (or potato starch): 1/4 cup (for dusting)
- Salt: 1/8 teaspoon
Instructions
- Step 1: In a microwave-safe bowl, combine the shiratamako flour, granulated sugar, and salt. Gradually add the water, whisking until the mixture is completely smooth and no lumps remain.
- Step 2: Cover the bowl loosely with plastic wrap and microwave on high for 1 minute. Remove, stir well with a wet spatula, then cover again and microwave for another 1-2 minutes, or until the dough is translucent, thick, and sticky.
- Step 3: Liberally dust a clean work surface with cornstarch. Carefully transfer the hot mochi dough onto the dusted surface. Lightly dust the top of the dough with more cornstarch, then let it cool for a few minutes until it's cool enough to handle.
- Step 4: Using a cornstarch-dusted knife or dough scraper, divide the mochi dough into 8-10 equal portions. Take one portion, flatten it into a disc (about 3-4 inches wide), then place a fresh strawberry in the center. Carefully stretch and fold the mochi dough around the strawberry, pinching the edges together to seal completely.
- Step 5: Place the finished strawberry mochi seam-side down on a plate. Repeat with the remaining dough and strawberries. Serve immediately or store in an airtight container for up to one day.
Notes
- Enjoy your strawberry mochi fresh, as the delicate texture is best within a few hours of making, though they can be stored airtight at room temperature for up to one day before the mochi starts to firm up.
- These delightful strawberry mochi are meant to be enjoyed fresh at room temperature or slightly chilled, so reheating is not recommended as it would alter both the delicate mochi texture and the fresh strawberry.
- Pair these delightful treats with a warm cup of green tea or a refreshing iced matcha for an authentic Japanese dessert experience, perfect after any meal.
- For the easiest handling, don't hesitate to liberally dust your work surface, hands, and tools with cornstarch; it's your best friend for preventing sticky situations while shaping the warm, pliable mochi dough.
