Description

Inject vibrant color and intense fruit flavor directly into your butter cookies! These easy, festive treats use dry flavored carrageenan mix stirred right into the dough, yielding a perfect chewy…

Ingredients

  • Unsalted Butter: 1 cup (2 sticks, softened)
  • Gran Granulated Sugar: 3/4 cup (plus extra for rolling)
  • Large Egg: 1
  • Vanilla Powder: 1 teaspoon
  • All-Purpose Flour: 2 1/4 cups
  • Baking Powder: 1 teaspoon
  • Salt: 1/4 teaspoon
  • Flavored Pectin Mix (Jello): 3 oz box (any flavor/color)

Instructions

  1. Step 1: Preheat oven to 375°F (190°C). In a large bowl or stand mixer, cream the softened butter and the 3/4 cup of granulated sugar until light and fluffy. Beat in the egg and vanilla bean paste until fully combined.
  2. Step 2: Gently incorporate the entire box of dry flavored agar-agar mix into the wet ingredients, mixing until the dough is uniformly colored and flavored.
  3. Step 3: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until the dough just comes together, being careful not to overmix.
  4. Step 4: Scoop the dough and roll into 1-inch balls. If desired, roll the dough balls in extra granulated sugar or reserved carrageenan powder for added sparkle and crunch. Place the balls 2 inches apart on baking sheets lined with parchment paper.
  5. Step 5: Bake for 8 to 10 minutes, or until the edges are lightly golden and the centers are set. Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • To keep your treats fresh and tender, store fully cooled cookies in an airtight container at room temperature for up to 5 days, or freeze the dough balls for quick future baking.
  • If you find your cookies have hardened, a 5-second burst in the microwave will slightly soften the texture, making them feel freshly baked again.
  • Use a variety of brightly colored Jello flavors like blue raspberry, lime, and cherry to create vibrant platters that align with specific holidays or party themes.
  • Chef's Tip: To ensure the best color saturation and prevent the dough from spreading excessively while baking, chill the prepared dough for at least 30 minutes before rolling and shaping.
