Instructions
- Step 1: Carefully peel the prickly pears by cutting off both ends, then making a shallow lengthwise slit through the skin. Gently peel away the skin, being cautious of any remaining spines. Cut the peeled fruit into chunks.
- Step 2: Place the peeled prickly pear chunks and 1/4 cup water into a blender. Blend until smooth. Strain the puree through a fine-mesh sieve into a bowl, pressing firmly with a spoon or spatula to extract all the juice and leaving behind the seeds and pulp. Discard the solids.
- Step 3: In a shaker or a small pitcher, combine the strained prickly pear juice (approximately 1/2 cup), fresh lime juice, and simple syrup. Stir well to ensure the sweetener is fully dissolved. Taste and adjust the sweetness or tartness if desired.
- Step 4: Fill two serving glasses with ice cubes. Pour the prickly pear mixture evenly into each glass.
- Step 5: Top each glass with sparkling water or club soda. Gently stir to combine. Garnish each mocktail with a fresh mint sprig and a lime slice. Serve immediately.
