- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt and freshly ground black pepper, to taste
- 1/4 cup chopped fresh cilantro (for garnish, optional)
Instructions
- Step 1: Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the diced sweet potatoes and cook for 8-10 minutes, stirring occasionally, until tender-crisp. Remove sweet potatoes from the skillet and set aside.
- Step 2: Add the cubed chicken to the same skillet. Season with garlic powder, smoked paprika, salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Step 3: Return the cooked sweet potatoes to the skillet with the chicken. Pour in the BBQ sauce and stir everything together until the chicken and sweet potatoes are well coated.
- Step 4: Sprinkle the shredded cheddar cheese evenly over the top of the chicken and sweet potato mixture.
- Step 5: Cover the skillet with a lid or transfer the skillet to a preheated oven at 375°F (190°C) for 5-7 minutes, or until the cheese is completely melted and bubbly. Garnish with fresh cilantro, if desired, before serving.
